Hummus Crusted Chicken


This is super quick to prep,healthy and delicious and a perfect way to bake a summer meal!

I know it’s hot out, but I just love using my oven to cook! There is something magical about throwing stuff in a pan and being able to rinse the dishes quickly (or wait until your hubby gets home to help you out with that part😉) and play with your kiddos or help them with their homework as dinner bakes in the oven and fills your home with those amazing smells! But since it is summer, I’m not really craving heavy casseroles or pasta bakes, I was looking for something light with A Mediterranean flair. And of course it had to be fast, nutritious, and delicious!

What you’ll need:

  • 4 chicken breast (boneless and skinless)
  • dried oregano
  • garlic powder
  • salt (preferably Himalayan pink sea salt) and pepper
  • 1 zucchini, chopped
  • 1 yellow summer squash, chopped
  • 1 medium onion,chopped
  • 1 Tbsp Olive Oil
  • 1 cup hummus
  • 2 lemons
  • smoked paprika

What to do:

Preheat oven to 450. Pat the chicken dry and season with salt, pepper, garlic powder and oregano. In a large baking dish combine the zucchini, squash, and onion with olive oil and a pinch of garlic salt and oregano. Then distribute zucchini onion mix evenly across the bottom of the baking dish.

Place chicken breasts evenly over top of zucchini, squash and onions, then cover each breast evenly with hummus. Squeeze the juice of 1 lemon over the chicken and veggies. Sorinkle the pan with Smoked Paprika. Slice up the remaining lemon and place slices between the chicken and veggies. Bake for 30-35 minutes. Enjoy!

I sprinkled some feta cheese and capers on my kids too after it was done cooking (they love capers and everything is better with cheese, right?!). I was thinking that the next time I make this I might also add some cherry tomatoes that have been cut in half to the veggie mix for some color.
