Cucumber and Tomato Salad

The 4th of July Holiday is upon us and we all know what that means! BBQs, beer, and fireworks! Summer is pretty much BBQ season as it is. It’s also swimsuit season. So what’s a health conscious mama to do when faced with all those tempting treats at said BBQs?!

Come prepared with a delicious and healthy side that’s also fast to throw together. That’s what!

This recipe is amazing and easy and you can load up your plate with this and then have a little room left over to indulge in a little bit of your favorite BBQ treats. Because I believe everything is okay in moderation, as long as you make healthy choices the majority (at least 80%) of the time.

Please note that this recipe is for 1 (very generous) portion, so you may want to double it or triple it if bringing along or making for your own BBQ. So here it is:

Cucumber and Tomato Salad from Beachbody’s Ultimate Reset

You’ll Need:

  • 2 Tbsp Red Wine Vinegar
  • 1 tsp Balsamic Vinegar
  • 1 Tbsp Fresh Lemon Juice
  • 1 Medium Cucumber (partially peeled, cut lengthwise and sliced)
  • 1 cup Cherry Tomatoes
  • 1 Tbsp Diced Red Onion
  • 1 Tbsp Fresh Italian (flat leaf) Parsley, chopped
  • 1 Tbsp Fresh Basil, chopped
  • Salt (Himalayan if you have it)
  • Herbal Seasoning to Taste

Whisk together the vinegars, lemon juice, and oil in a small bowl. Set aside.

Gently mix cumumber, tomatoes, onion, parsley, basil, salt and seasoning blend (if using) with a spoon in a large bowl. Drizzle dressing over veggies and toss gently.

You could also add feta or olives if you’d like. To turn this into a meatless meal option you could also add some quinoa or whole wheat couscous.
